Authentic and creative starred Provencal cuisine
Mathias Dandine, passionate about his region, is committed to keeping alive the original cuisine of Provence. In these lands of the Aix countryside, quality products are within reach to create flavorful, fragrant, and colorful dishes.
Starred at La Magdeleine, the chef’s menu at La Bastide Bourrelly is a tribute to the cuisine he treasures, inspired by the terroir of his native region: a jovial, gourmet, generous experience, with a touch of creativity. Combining flavors and textures here and there, with true respect and desire to enhance inspiring products.
Mathias Dandine and his executive chef Guillaume Lemelle remain faithful to Provencal culinary traditions with inventiveness and refinement, with an ongoing desire to offer a pleasurable interlude.
The refined décor and choice of white for plates and tables reflect the authenticity and simplicity of our duo of Chefs.
A seasonally inspired menu
Firmly attached to the area, the Chef’s cuisine is based on products with a short-circuit basis, between Provence and Camargue: stuffed courgette flowers with crab, lemon, and marjoram, a fine tart with "bull from Camargue, eels and citrus vinaigrette", candied fennel "a vegetable dish with the flavor of Provence"...
Vegetables and fruits from Provence are featured all year round, as well as meat and game dishes, with seasonal variations such as “hare à la royale”, partridge or pheasant pithiviers, and rabbit the "Jambinoti way".
Mathias was born by the sea. His gourmet restaurant near Marseille also features seafood from our shores… cooked yellowtail delicately garnished with artichoke peppers and agnolotti au jus; cooked monkfish marinated with glazed carrots, chopped green olives and capers; crayfish casserole in "marinière" sauce.
Desserts are equally inspired by the terroir, such as apricots from Provence, vanilla cream, rice pudding granita with almonds, or the traditional croqu'feuille, poached peaches from Gémenos, warm juice "almost Melba" iced cup.
Children too are welcome in this charming property, where we offer a special Kid’s menu for their delight.
