Mathias is truly a child of Provence. The son of two restaurateurs from Bormes-les-Mimosas, he was trained by Gui Gedda, “the pope of Provençal cuisine”, and then went on to pursue his career in prestigious establishments (with Louis Outhier and Stéphane Raimbault at L'Oasis, Jacques Chibois and Bruno Clément in Lorgues), before returning to his native village, at L'Escoundudo, for 10 years.
He then discovered Le Lavandou, before moving on to Le Tholonet. In 2019, this committed chef moved into an 18th-century bastide at the foot of the Sainte-Baume, his first owned property La Magdeleine. A year later, the gourmet restaurant was awarded a Michelin star in recognition of its respect of the Provencal lifestyle and authentic cuisine.
