Itinerary of a child of Provence

Mathias is truly a child of Provence. The son of two restaurateurs from Bormes-les-Mimosas, he was trained by Gui Gedda, “the pope of Provençal cuisine”, and then went on to pursue his career in prestigious establishments (with Louis Outhier and Stéphane Raimbault at L'Oasis, Jacques Chibois and Bruno Clément in Lorgues), before returning to his native village, at L'Escoundudo, for 10 years.

He then discovered Le Lavandou, before moving on to Le Tholonet. In 2019, this committed chef moved into an 18th-century bastide at the foot of the Sainte-Baume. A year later, the gourmet restaurant was awarded a Michelin star in recognition of its respect of the Provencal lifestyle and authentic cuisine.

With 20 years’ experience in Provence, the Michelin-starred chef Mathias Dandine, is committed to authentic, contemporary cuisine.

Bringing out the best in the terroir, drawing inspiration from the flavours and aromas of the Mediterranean, composing a gourmet palette based on local, seasonal produce: the chef’s dishes are a tribute to the original cuisine of Provence, with the love of what is good, beautiful and respectful of authentic flavours. 

Mathias Dandine's cuisine is deeply rooted in the land, but also in its times. With masterly technique, he creates and imagines flavor and texture combinations with finesse, refinement and inventiveness.

The signature contemporary cuisine showcases regional vegetables, meats and fish.

Both restaurants La Magdeleine and La Bastide Bourrelly are home to this passionate, Michelin-starred chef, who brings his Provençal culinary identity to life elegantly and simply, creating a gourmet cuisine that resembles his own: homely, authentic and sincere.

Bastide Bourrelly, set in the hinterland just 10 minutes from the centre of Aix-en-Provence, immerses you in the dynamic life of a Provencal village.

This welcoming, outdoor venue is located in the heart of Calas-Cabriès, in a pleasant square where residents and travellers meet and mingle. It holds the promise of unprecedented convivial moments to enjoy.

La Magdeleine, an 18th-century bastide, awaits you in the heart of a two-hectare wooded park, at the foot of the Sainte-Baume mountain in Gémenos. This is where the Provence of wide open spaces and exceptional landscapes reveals all its beauty.
