  • Festive delights: Traditional pissaladière, seasonal amuse-bouches
  • Winter vegetable tartlet from Cultivateurs Deux Sens, with black truffles from Provence and a truffle-infused garden vinaigrette
  • Celery tortellini with squash and herbs, truffle-infused celery jus, herb espuma, and freshly grated black truffles
  • Seared sea bass infused with truffle, confit Jerusalem artichoke, Jerusalem artichoke espuma, caramelized onion jus, crispy Jerusalem artichoke chips, and black truffle shavings
  • Or/And
  • Pithiviers of pheasant and foie gras, served with a young sprout salad and truffle jus
  • Truffle-infused parfait glacé, Madagascar vanilla cream and gel, pear and truffle-infused celery jus, and puffed buckwheat
