"A journey through the black truffles of Provence"
- Festive delights: Traditional pissaladière, seasonal amuse-bouches
- Winter vegetable tartlet from Cultivateurs Deux Sens, with black truffles from Provence and a truffle-infused garden vinaigrette
- Celery tortellini with squash and herbs, truffle-infused celery jus, herb espuma, and freshly grated black truffles
- Seared sea bass infused with truffle, confit Jerusalem artichoke, Jerusalem artichoke espuma, caramelized onion jus, crispy Jerusalem artichoke chips, and black truffle shavings
- Or/And
- Pithiviers of pheasant and foie gras, served with a young sprout salad and truffle jus
- Truffle-infused parfait glacé, Madagascar vanilla cream and gel, pear and truffle-infused celery jus, and puffed buckwheat
